Ingredients

  • 1/2 cup dry quinoa, 1/3 cup red onion, chopped1 orange, peeled then segmented
  • 1 avocado, chopped
  • 1 cup canned black beans, rinsed and drained
  • 1 cup pomegranate seeds (about 1 pomegranate worth)
  • 1 cup frozen corn, thawed
  • 1/3 cup chopped fresh cilantro
  • salt and pepper

For the Lemon Vinaigrette:

  • 1/4 cup fresh lemon juice (about 2 lemons worth)
  • 2 garlic cloves, microplaned or finely minced
  • 1 teaspoon agave nectar or honey
  • salt and pepper
  • 6 Tablespoons extra virgin olive oil

  • 1 medium carrot – create ribbons using a vegetable peeler
  • 2 large handful of kale, washed and shredded, stems removed
  • 1/2 a tin of chickpeas
  • 1 small grapefruit peeled and segmented or sliced
  • 1/2 tbsp tamari
  • 2 tbsp almond butter
  • 1 tsp lime juice
  • 3-4 tbsp water
  • 1 tsp grated fresh ginger
  • 1 small or half a medium clove of garlic minced
  • Pinch of sea or rock salt to taste for the dressing

  • 1/2 large cauliflower broken into florets
  • 2 tbsp olive oil
  • 1 tbsp runny honey
  • 1 tsp cumin seeds
  • sea salt and freshly ground black pepper
  • 3/4 cup red quinoa
  • 3/4 cup black quinoa (or 1 1/2 cups of just one sort)
  • 1 tsp oil
  • 2 1/4 cups water
  • 2 sticks celery, reasonably finely chopped

  • 1/2 cup roasted peanuts (or toasted almonds or walnuts), roughly chopped
  • 1 large or 2 medium carrots, grated

Dressing:

  • 4 tbsp freshly squeezed lemon juice
  • 1 tbsp runny honey
  • 1 tsp curry powder
  • 1 tsp dry toasted cumin seeds
  • sea salt and freshly ground black pepper

  • 2 tbsp extra-virgin olive oil
  • 1 tsp Dijon mustard
